METHOD
1. The night before we plan to cook, we take our pork belly out of the fridge and pat dry with paper towels. Score the fat with a very sharp knife in a diamond pattern making sure not to cut into the meat.
2. We Combine lots of salt, garlic, rosemary, fennel, and other secret herbs and brown sugar and rub pork belly on all sides. We place Place on a drying rack on a pan and refrigerate uncovered overnight.
3. About 30 minutes before cooking, remove pork belly from fridge. Rinse under cold water and then pat very dry with paper towels.
4. When ready to cook, start the Traeger grill on smoke with lid open until re is established (4 to 5 minutes). Set the temperature to High and preheat, lid closed, for 10 to 15 minutes.
5. Place pork belly directly on grill grate fat side up for 30 minutes. After 30 minutes, reduce grill temperature to 325 degrees F and cook for 3 hours or until pork is tender and fat and skin is crisp.
6. Remove from grill and allow to rest for 30 minutes before slicing (if desired) or ready for pick-up. You may serve best with baked beans, potato salad, coleslaw, white bread, lechon sauce or your favorite BBQ sides. Enjoy!
